Whole Roasted Cauliflower {with yogurt & goat cheese dipping sauce}

Funny looking vegetable, isn’t it? I promise it’s a cauliflower though. I wasn’t quite sure how to maintain it’s beauty once it was all chopped up so I decided to try roasting it whole and I have to say, Chris and I have decided it’s our new favorite preparation for cauliflower of any color.

Purple, orange, white, or green, we want it poached then roasted, and dipped in a creamy, tangy, cheesy, sauce.

Lemon Goat Cheese Cauliflower Mash

Cauliflower mash. Let’s be real, that does not sound appealing.

But it’s looks and taste are more deceiving than you know. It eerily similar to mashed potatoes but these have a little twist of lemon and goat cheese.

Strawberry Goat Cheese Tea Sandwich {with balsamic dipping sauce}

I made these on a whim the other day because Chris purchased an extra large package of goat cheese for a pizza we made, and I was a little worried we wouldn’t get through it all before it spoils.

Normally devouring cheese isn’t an issue in the LYK, but this log of goat cheese is a bit oversized even for us. I suppose he was just trying to be thorough when he was sent to the store though.
