It never really occurred to me that using a scale for baking was sometimes a necessary and useful addition. I thought using a scale was for wimps. Or neurotic measure-rs. Or those who have just graduated from the Easy Bake Oven. Man, do I miss that thing sometimes. Who knew that baking a mini cake with the power of a light bulb would be so much fun?
That is, until I saw a post from Brown Eyed Baker about the perks of measuring the weight of ingredients for a more precise mix of ingredients and a better recipe outcome.
Luckily, I can say that most of my baked goods have turned out fine, but I can’t say the same for results from bread-making; I feel like the final outcome is different every time.
Lauren and I make fresh baked rolls for the homeless in our community, every Thursday, and I can honestly say that the bread dough seems to turn out different every.single.time. One batch will be sticky, one too dense, and another flat. Ok, I’ll admit that, on occasion, we have forgotten to add key ingredients, like eggs and butter…or perhaps a few cups of flour. Eh hem…the truth is out.
It’s about time to start weighing in on the ingredients. Thanks to our brand spankin’ new Escali scale , we enter a new era of more precise baking, and thus tastier results.

Exhibit A:
Check out these Lingerie Cookies made for my best High School friend’s Vegas bachelorette party. I wanted these to come out perfect so that I could trust them to travel well, taste good, and look pretty. I followed this blog for the sugar cookie recipe, and this blog for instructions on how to decorate the cookies.
They were a hit!
They took forever, but it was artsy, fun, and pretty easy to do. Just time consuming. Pop in a good movie or some chill tunes and sip on some vino. And by “good movie” I wouldn’t advise Blood Diamond. Sheesh that was far too intense for a lingerie cookie decorating session.

Now here are some beauuuutiful rolls.
There is a vast difference between measuring by weight versus throwing what you think is a cup of flour, especially when you are diving into a 25-lb. bag of flour with your 1-cup measuring utensil. You are bound to get a hefty amount of flour in that one scoop.
