Orange Ginger Wine Spritzer

Are you guys feeling this heat wave? It hasn’t just hit California, that’s for sure. Friday + hot summer weather = kick your feet up it’s time for a cold cocktail. Or a wine spritzer. Or both? But first start with this luscious libation.

This next sentence might be offensive to the world of the winos out there (especially the FAW crew…aka our neighborly Friday wine and cheese night), but here goes.

Sometimes white wine is just boring.

Red wine is where it’s at. That’s the truth.

However, when you are wanting a beverage on the cool and refreshing side, you gotta go with a crisp white. And then add stuff to it. Like for example, a healthy pour of frosty cold ginger beer and a splash of freshly squeezed blood orange juice.

That’ll do it folks. Instant wine spritzer, perfect enough to enjoy by itself. No meal pairing needed.

You could use a regular old orange or tangerine, but the blood orange has such great flavor, they are usually extremely juicy, have a perfect balance of sweet and tangy, and they have such a sultry deep red color.

I guess anything to make white wine more, well, red. ;)

This fun spritzer will be a great recipe to have on hand during the hot summer months, so be sure to book mark it! And when I mean “book mark it” I really mean make it now. It’s Friday for goodness sake. Time to bring on the weekend with a crisp wine beverage.

 

Orange Ginger Wine Spritzer

Print Recipe!

Serves 1 or 4-5, respectively

Ingredients:

For a single glass:

5 oz white wine

2 oz ginger beer

1 ½ oz freshly squeezed blood orange juice

Ice

 

For for a pitcher:

1 bottle of sauvignon blanc

1 (12 oz) bottle ginger beer

8 oz freshly squeezed blood orange juice

Ice

 

*Little Yellow Note: All of these ingredients are to taste. Feel free to make adjustments to suit your preference!

 

Directions:

Mix wine, ginger beer and freshly squeeze blood orange juice, together. Pour into a glass, over ice. Enjoy

LYK Relaxation Station: Sparkling Peach Spritzer

Hurray for Friday! You know what that means…it’s time for the LYK Relaxation Station to show you how to whip up a tasty post-work/pre-weekend libation.

When life gives you peaches and a heat wave, you make a Sparkling Peach Spritzer. It’s as simple as that.

Especially on a Friday. Especially at 5 O’clock. Especially when it’s 80 degrees, by the beach. Especially when it’s Shark Week…

 

This fancy drink is simply delightful. And it’s the perfect thing to sip on at any time of the day. Socially acceptable? Totally. Because we just said so.


I hate to say it, but I’ll say it with confidence. I think this drink could replace the mimosa. I know a few people who would administer a swift kick to the shin after saying a thing like that, but I stand by my words. Sometimes you just might want something a little less on the bubbly side, so that you won’t have the burps and a champagne baby to deal with for the rest of the day….TMI?

Here’s the Step by Step:

Pit and chop peaches.

Throw them into a blender and puree.

Puree until it looks as smooth as butta’… like this. Then add the honey.

Mmmm the honey really helps bring out the sweetness from peaches and is somewhat reminiscent of a homemade peach jam. You could totally spoon it into some yogurt, or drink it like this, but since it’s from the LYK Relaxation Station, you’ll have to add the wine. :)

Give it a quick blend to mix the honey into the peach puree. Pour into a fine mesh sieve that is sitting over a large bowl. With a spatula, press the puree through the sieve until all but the small pieces of peel are left; discard the peel remnants.

Add a squeeze of lemon, to help prevent the peach puree from browning and mix into the puree.

For a pitcher, add in the finished puree and pour in the bottle of wine (or bottle and a half if you want to get wild, we don’t judge), then add about a cup or so of mineral water.

Or you could go the glass route and make individual servings by adding 1/2 part peach puree, 1/2 part chilled wine, and a heavy splash of mineral water…all to taste!

Feel free to customize your own combination of puree, wine, and mineral water. Just be sure you are still able to taste the fresh peaches!

 

See, super simple and fresh! If that doesn’t cool your jets during these hot summer months, then I don’t know what will…

 

Sparkling Peach Spritzer

Serves 4

4 Peaches

3 Tbsp honey

Juice from 1/2 lemon ( about 1 1/2 Tbsp)

1- 1 1/2 bottle crisp white wine, chilled (we used Pino Grigio)

Mineral water

 

Direction:

Peach Puree: Pit and chop the peaches. Place in a blender or food processer and blend on high until fully pureed. Add honey and mix into the puree. Pour into a fine mesh sieve that is sitting over a large bowl. With a spatula, press the puree through the sieve until all but the small pieces of peel are left. Discard the peel remnants and wash sieve immediately so it can be easily cleaned.

Squeeze half of a lemon into the peach puree and mix. Cover and let chill for a few hours until ready to use, or use immediately.

To make spritzers: In a glass, combine 1/2 part wine with 1/2 part fresh peach puree and a top with a heavy splash of mineral water ( about 3 oz). If you would like to make a whole pitcher, add peach puree, bottle of wine and about 1 cup mineral water, stir together and serve. Garnish with a fresh peach slice or a sprig of mint and enjoy!

LYK Relaxation Station: Peach Basil Margarita

Last weekend, we had a LOAD of ripe, juicy peaches and it was far too hot to make my absolute favorite thing to do with ripe, juicy peaches: either cobbler or crisp.

I would easily trade in any meal for this kind of dessert. You know, like out on the playground with your sack lunch, playing tradesies with your pals. Too bad, none of them would have a fresh hot peach cobbler in a brown paper bag…one day, my kids will hit the jackpot. Either that or they will be so confused and wish they had a fruit roll-up just like every other kid.

Getting back to my dilemma, we needed something cool, something refreshing and lucky for us, we had a pool party to attend in a few hours. Margarita. Duh.

We also happen to have a basil plant that is out of its mind. No matter how many things that we make just to use up the basil, we still can’t seem to make a dent. We would probably need a weed whacker to make any noticeable difference. But don’t worry, we wont do that; that would be blasphemy.

This tasty margarita is just the thing to…

1) rid you of your peach and basil overload.

2) quench the need for a refreshing beverage during this upcoming heat wave.

3) use as an excuse to whip out the tequila and festive marg glasses…

Aye chi wah wah! You are the most bonita margarita that I have ever seen! And you taste pretty darn good, too.

If you happen to have darling little marg glasses, such as these ones gifted to us by Lauren’s Mom, I bet you would give them a hoot and a holler, too!

It’s only natural. But they get shy, so only do it once.

Peach Basil Margarita

Makes 1 pitcher, (serves about 4-5)

Ingredients:

1 cup gold tequila (Jose Cuervo will do just fine)

2 cups fresh peach purée

1/2 fresh lime juice

Handful of fresh basil, coarsely chopped (about 1/3 cup)

2 cups light beer (for a weaker drink: use 1 cup beer and/or 1 cup orange or lime soda water)

1 cup orange or lime soda water

Ice*

 

Directions:

Pit peaches and puree them in a blender  in order to yield 2 full cups of puree. Add in the coarsely chopped basil leaves, fresh squeezed lime juice and tequila and blend until basil leaves are broken down into much smaller pieces (about 30 seconds).

*If you like a blended margarita, add 1-2 cups of ice at this point and blend well, to desired texture.

Add the beer and/or soda water and stir in with a spoon or gently pulse a couple of times to mix. Pour over ice and serve immediately, or cover and store in the fridge until ready to drink (then pour over ice and serve).
