Christmas M&M Mocha Cookies

So here you have it, LYK Christmas dessert #4. Filled with coffee, chocolate and candy.

First we had these minty delights.

Then this chocolaty wonder.

Next up were these crunchy fruit n’ nut cookies.

And last but not least, this awesomely gooey, chocolaty and filled with coffee flavor Christmas cookie.

Ina Garten always, and I mean always, adds instant coffee to her chocolate baked goods.

I’ve been oh so curious as to why on Earth this was of utmost importance to her. She really makes quite a big deal about it.

Well friends, I think Ina and I could should be best friends. I now totally understand her need for instant coffee with chocolate and respect her even more for it.

I’ll be honest. I thought her constant comments on it bringing out the depth of flavor were purely show, but alas, that is not the truth.

These cookies have ended my stubbornness in leaving coffee out of my chocolate baked goods.

Ina, you win. (Duh)

I am forever grateful for this little tip and promise to never leave out the instant coffee in my brownies, chocolate cookies or chocolate cake ever again.

These would do well paired with a cup of coffee, considering there is coffee in them.

The color of the M&M’S really are the only Christmas-y thing about these so when Christmas passes there is no reason you couldn’t make these with good ‘ol chocolate chips.

M&M Mocha Cookies

Adapted from M&M website

Makes about 48

Ingredients

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
2/3 cup granulated sugar
2/3 cup firmly packed light brown sugar
1 large egg
1 teaspoon teaspoon vanilla extract
2 tablespoons instant coffee granules, dissolved in 1 tablespoon of water
1/2 cup coarsely chopped nuts
1/4 cup unsweetened cocoa powder
1 cup M&M’S Christmas colored candies

Directions

Preheat oven to 350°F. In a small bowl, combine flour, cocoa powder, baking soda and salt; set aside. In a mixing bowl, cream together butter and sugars until light and fluffy; add egg, vanilla and dissolved coffee granules. Blend in flour mixture, nuts and M&M’S.

Drop a tablespoon full of dough about 2 inches apart onto cookie sheets. Bake 10 to 12 minutes. Cool for about a minute on the cookie sheet then move to a wire rack until completely cooled.
