Cantaloupe & Mint Popsicles

We went backpacking a few weekends ago. My pack was bigger than I am and I was exhausted by the end of it.

Chris pushed me out of my comfort zone with this adventure and I thanked him. While it was a little rough climbing at that altitude with no cardio training, I don’t regret it. Thank goodness for barre classes that build up my muscles!

Open-Face Tomato Sandwich {with creamy feta spread}

I’m still thinking about Italian tomatoes. I could eat them all day, every day…and I did for 2 weeks.

The tomatoes in Italy are so flavorful and sweet that even the seemingly unripe, green-ish tomatoes are better than any tomato I’ve had in America. Their tomatoes taste how a tomato should taste yet that flavor is still beyond your imagination unless you’ve had one.

Soooo we’re going to Italy in THREE days!!! Chrissy and her man leave tomorrow and Chris and I are right behind them. We’re headed to Sorrento for our friend’s wedding where there will be a 5 course meal served over 4 hours, a man making fresh mozzarella, unlimited wine, and spectacular views.

You’ve probably heard about the fires going on here in San Diego. Our prayers are with all those who are being affected. Fortunately, we are by the beach and far enough away from the fires that our air quality is still good and our homes are safe.
