Summer Squash Crostini {with ricotta & lemon}

Patty pan squash might be the cutest little vegetables known to man. They are such a pretty shape and are so tiny! I regret not taking a photo before I chopped them up for this recipe but Google it and you’ll have to agree with me.

While I used patty pan squash for this recipe, you can just as easily use yellow squash and zucchini if patty pans aren’t available to you.

Simply Carnitas {tacos 2-ways}

These carnitas have been a long-time coming. Chris asks for them every time I ask what he wants for dinner. Had I realized how simple they were I would’ve appeased him long ago!

Not only are these a one-pot wonder – you just need a couple of hours around the house to watch them – but they also have so few ingredients! It’s also an extremely inexpensive meat to buy. I call that a win-win-win.

Assorted Greens & Feta Tart {with crispy olive oil crust}

Spring has sprung! And it’s gloomy, drizzling, and cold in San Diego. Cold is of course relative at 63 degrees but either way, the last few weeks of winter were spent laying on the beach so Spring has yet to impress me.

Irish Soda Bread Breakfast Sandwich {toasted with cheese and arugula}

Happy St. Patrick’s Day!! I hope you have your corned beef slow cooking away preparing itself for tonight’s feast.
