Salads are usually healthy go-to meals. But we as we have learned from restaurants and fast food places fessing up to the calorie count and ingredients, we know that salads aren’t always the healthiest of options out there; the culprit being fatty dressing and processed, chemical-laden ingredients.

Bleh.

How to remedy this? Easy. Get to the store, buy some fresh ingredients and produce and make your own salad and dressing. Boom. Case closed.

I always have greens on hand. Romaine, spinach, kale, arugula or some combination of these things. Their staples in our refrigerator because they are so versatile. I love pulling together salads for lunch using leftovers from dinner or other miscellaneous kitchen staples. It’s so easy, healthy, and never requires a recipe.

Autumn Kale & Butternut Squash Salad {with Yogurt-Mint Dressing}

Green leafy salads in fall are kind of like soups in summer. You really don’t associate the two, despite the fact that it’s perfectly acceptable to eat seasonal variations on the dish (i.e. gazpacho). Well, after this salad, I officially associate salad and Fall.

Deep green, chopped kale and spicy arugula topped with roasted butternut squash and juicy pomegranate seeds makes for a darn delicious meal.
