Mango, Banana & Almond Butter Smoothie

I spent all weekend out in the beautiful sunshine. I think the only times that I came inside was to eat a real meal and to sleep.

Between surfing down at my favorite long boarder’s spot and biking down the boardwalk several miles in an attempt to avoid jammed up parking lots, so I could play beach volleyball, there was barely time for anything else.

I normally pack my beach bag with some snacks, but after expending energy all day I needed a late afternoon pick-me-up, so I could make it to dinnertime. This smoothie revived me after a full day of outdoor activities, in the perfect San Diego weather.

This would be a great breakfast smoothie to get your day going, a post workout drink, or a healthy and filling beverage.

The chia helps hydrate, the protein helps rebuild muscles, banana adds some potassium, mango sweetens it up, and the almond butter adds a little more protein and good nutty flavor.

Now is the time to freeze your fruit, especially if you have a supply that is quickly becoming overripe in the warmer weather. It’s easiest to peel and chop into pieces before freezing, so that they are readily available to go straight into the blender.

If you didn’t want to add protein powder (maybe you are scared of the stuff), then omit it and replace the water with almond milk, or your preferred milk. Juice would also work, but the creaminess from the milk (or protein powder) gives this smoothie a nice taste.

Mango, Banana & Almond Butter Smoothie

Print Recipe!

Serves 1

Ingredients:

½ mango, cubed

1 frozen banana, sliced

1 Tbsp almond butter (I used my homemade Vanilla Cinnamon AB)

1 scoop vanilla protein powder*

¾ Tbsp chia seeds

½ cup water*

4 cup ice cubes

 

Directions:

Blend all ingredients together until well combined. Enjoy immediately & feel refreshed.

*option to omit the protein powder and sub almond milk (or other milk) for water.

A weekend to remember {engagement party & more}

Chris and I had our engagement party this weekend and we never could have imagined the outpouring of love, excitement and genuine friendship that we had this weekend.

Nearly 40 of our closest friends (+ a little family) from all over California and all parts of our lives came together to celebrate with us and it was so much fun.

Our amazing friend (and bridesmaid!) Darci made some beautiful centerpieces and a scrapbook for people to write in. The centerpieces will be scattered throughout the LYK for at least a week and we will cherish that little book of memories forever!

Chrissy baked some of the fluffiest chocolate cupcakes ever for the party! So light and moist…perfection.

Oh and that cream cheese frosting, wow. These classy little cakes were a hit. It sure doesn’t hurt to have a maid of honor that can bake with the best of them.

Chrissy and I also had a date with each other, an almond scone, ham and cheese croissant and cappuccinos before trying on some bridesmaid dresses on Saturday morning.

Before I tortured Chrissy and Darci with trying on bridesmaid dresses for hours on Sunday, we ate a very large and delicious meal.

We had a fabulous Short Rib Hash and Pulled Pork Eggs Benedict from Burlap courtesy of our extremely generous friend Jessi!

Then we proceeded to stuff ourselves with dessert when she surprised us with a gorgeous customized dessert plate!

Lemon Grass and Coconut tapioca and carrot cake. Wow.

What an amazing weekend. Thank you to all of our friends and family who made it so memorable and special for Chris and I. We are so incredibly grateful to have you all in our lives!

A Very Happy Birthday {so much to celebrate!}

I had a lot to celebrate this year. Like A LOT.

I hadn’t mentioned this yet but I feel comfortable now that everything has settled and things are looking up. I’ve been battling a bit of cancer over the last few months. Thyroid cancer to be specific.

While it was caught in the early stages and I was told by doctors it was a curable cancer, it sure was a stressful point in my life. These past few months without my family, fiancé, and friends, would have been quite awful. The news came last week that my final scan showed no signs of cancer and that was quite the birthday gift.

So, this year on my birthday I celebrated being cancer free!

I’m also getting married in September to the love of my life. If that’s not reason to celebrate, I’m not sure what is!

Oh, and I also turned 25. This is the first year I’ve really felt old since I turned a teenage corner at a ripe ‘ol 13. A quarter century!

My friends really helped me ring in this new year of health and happiness. I was welcomed home by my friends with a birthday dinner out to our favorite local Italian spot, Enoteca Adriano, where we dined on the famous Pope’s Pillow.

Friday night was all about fondue. Friday Fondue with Friends.

You probably think I’ve celebrated enough at this point but the best is yet to come.

Yes, that’s a floating BBQ boat. I was surprised to find out that instead of a picnic in the park, we were climbing into this for the afternoon!

Captain Chris steered us all around the bay while we grilled sausages, sliders, and veggie skewers and sipped on our wine. The weather was perfect, the bay was empty, and the seals were out to play.

For dessert, Chrissy whipped up what is quite possibly the best pie ever. Peanut Butter Pie with and Oreo crust. And even more impressively, she served it to everyone while on a rocking circular boat.

It was the perfect birthday and with so much to celebrate, I’m beyond excited have such thoughtful friends and family to do it with.
