Burrata BLT {and Mom’s Day}

This is late…I realize Mother’s Day has passed.

I still felt compelled to share about my mom and the activities from mama’s day though.

My mom is one of the most selfless people I know. She’d drop everything for me if I needed her to (and has). And not just me, she’d drop everything to help almost anyone.

She’s a fantastic listener and always up for giving advice. If you need someone to talk at, she’s your gal.

My mom is quite optimistic. If you gave her lemons, she would politely smile and literally make you some lemonade. She might even give it some rosemary or lavender essence, just because she likes you.

While we beg her not to sing, I do beg her to make me dinner. Her cooking skills are out of this world.

My BBLT for example probably would have been even more gourmet if I let her help. But it was Mother’s Day so I told her I was in charge.

She’s as cool as a cucumber, my mom. I love her.

Onward to BLT’s. This is no ordinary BLT. It’s a BBLT. Burrata, Bacon, Arugula, and Heirloom Tomato sandwich on fresh ciabatta.

That salty bacon with creamy burrata is the best. Then the sweet tomato and spicy arugula. Fantastic combination.

These were so easy to wrap up for our picnic. We brought the burrata along and spread it on right before we ate to prevent soggy bread. Perfection.

With a  side of kale salad, watermelon, then homemade coconut macaroons, it was a perfect picnic with the whole family.

Burrata Bacon Lettuce & Tomato Sandwich

Ingredients

Fresh ciabatta sandwich roll

Bacon, cooked

Heirloom tomato (I used mini heirlooms)

Arugula

2 tablespoons burrata, per sandwich

Directions

Pile one half of bread with bacon, tomato, and arugula. Spread the other half with burrata.

Mushroom & Spinach Breakfast Sandwich

There are some days that require a good, hearty meal to kick things off before the insanity ensues.

Although I’ve never gone wedding dress shopping for myself, I have done multiple rounds of bridesmaid dress shopping. I don’t know which one is more draining.

These types of outings require substantial breakfasts. Because that next meal might not be so soon…who knows how it will take to try on 78 dresses?

Although, not TOO substantial.

We figured that out the hard way when Lauren had an appointment to say “yes” to the dress, and we decided it was a good idea to gorge ourselves on the best brunch in town at Burlap.

After that glorious meal, all we wanted was a bed, not a fitting room. I was hoping there would be a mattress store adjacent to the boutique, but, no such luck.

Both of us couldn’t stand up straight.  We were literally leaning on the dress racks, in between Lauren trying wedding dresses and me trying bridesmaid dresses and the store owner looking at us, thinking that we were severely hung-over…which was not the case (this time).

Unreal.

Back to substantial breakfasts…

This breakfast sandwich contains some of the usuals, like Canadian bacon, cheese, egg and of course bread; however, this one is packed with a savory sauté of onions, spinach, and mushrooms, slices of ripe avo and drizzled hot sauce.

Yep, perfection.

I highly recommend a side of salsa for dipping. And maybe even go wild with some Sriracha.

 

Mushroom & Spinach Breakfast Sandwich

Print Recipe!

Makes 1 sandwich (easily increase servings for more people)

Ingredients:

4 Crimini mushrooms, sliced

1 handful spinach leaves

1 slice of cooked Canadian bacon, or ham

1 small green onion, chopped

Olive oil

Salt

Pepper

4 slices of avocado

3 slices raw cheddar cheese, or another mild cheese

1 large egg

1 English muffin, toasted (I used whole wheat from TJ’s)

hot sauce, optional

salsa, optional

 

Directions:

In a small or medium skillet, heat about 1 1/2 tsps of olive oil. Add mushrooms and green onion. Sautee on medium-high heat for a couple of minutes. Add a big handful of spinach and toss to wilt down, for about another minute, while sprinkling in a small pinch of salt and pepper. Transfer to a plate.

Toast the English muffin halves, while frying an over easy egg in a skillet with a dash of olive oil to the bottom, and a sprinkle of pepper. Remove cooked egg from skillet and throw the piece of Canadian bacon on there to heat it through.

On one side of the toasted English muffin, place slices of cheese, pile on the spinach and mushroom saute, add ham, egg, slices of avocado, desired amount of hot sauce, and top with other end of the toast. For melty cheese, heat the whole sandwich on the skillet for a couple of minutes on each side, being careful to keep the contents and the egg intact.

Serve with a side of salsa or more hot sauce, and a steamin’ cup of Joe.

Kiwi & Walnut Chicken Salad

I’d love to show you something really impressive and totally unique that I’ve made in the recent days but to be honest, there has been little to no time for cooking.

It’s a little bit sad but with good reason. Cooking and yoga are my daily release and recharge, but lately other things in my schedule have taken precedence. Mainly wedding/marriage prep!

It is all so exciting, surreal, and fun but also very time consuming. Now, I’m not complaining because the two tastings we did were out of this world delicious and we totally stuffed ourselves so there was no need for a home cooked meal those nights.

Florist meetings have been a little too much for me. I know nothing about flowers but feel like I need to in order to complete the wedding’s “theme”. You mean there are flowers other than roses, daisies, and babies breathe?! Oops. It quite daunting but we’ll get there.

Registering – now that was an adventure. After one trip to Macy’s we decided holding a scanner and wandering the store like lost puppies for 3 hours was not the most beneficial way for us to do this. Chris and I spent a few hours over the last couple of weeks registering mostly online instead. Whew.

We’ve also been taking a marriage class through our church which has been amazing. We’ve gained so much knowledge of how to be loving, understanding spouses for one another and have grown together even further throughout the experience.

With that said, I have another chicken salad for you. This is my go-to meal all week long when things get crazy, and I don’t get home until 10 p.m. I highly recommend you give this one a try.

The kiwi is a perfectly sweet pop amongst the creamy chicken and crunchy toasted walnuts. It literally took me minutes to throw this together, so get on it and have yourself a healthy, homemade lunch!

Kiwi & Walnut Chicken Salad

Ingredients

1 cups cooked, shredded chicken

1/3 cup plain Greek yogurt (or mayonnaise)

1/4 cup toasted walnuts, chopped

3 kiwis, peeled and diced

1 rib celery, diced

1/4 cup green onions, thinly sliced

1/4 teaspoon salt

1/2 teaspoon pepper

Directions

Mix all ingredients together in a large bowl. Store in airtight container.
