Broccoli & Blue Cheese Soup {with chicken sausage}

by Lauren

I made a couple of delectable cheese boards for a NYE party last week and we still had quite the hunk of blue cheese left over. I had the urge to make something special with it since it’s rare that we have any cheese other than feta, cheddar, or parmesan in the house.

We haven’t been dishing out very many soup recipes this season in the LYK so I thought I’d indulge winter and make this pureed vegetable soup.

Spiced Sweet Potato, Apple and Kale Quinoa

by Chrissy

Quinoa never really had a place at the Thanksgiving table, but now I believe it does.

This dish includes a healthful repertoire of fan favorite ingredients, combined with spices to elicit a hearty Autumn scent.

If traditional stuffing isn’t your favorite (gasp!), then this dish can definitely be considered as an alternate. These flavors pair very well with poultry. And if you are wondering whether gravy can be poured over top, it has been done; which means that it has … Read more...

I normally wouldn’t attempt to make lasagna. Although I adore it, it’s a tad time consuming. Layer after layer…after layer.

Especially when pumpkin is in the mix!

By the way, have you ever had rainbow chard?! It’s totally the new kale and definitely my new favorite green. The gorgeously colored stems may or may not have swayed me to this decision.

Sweet Potato Gnocchi & Roasted Butternut Squash

by Chrissy

News flash: I actually felt a little chilly sleeping with the fan next to my face, last night. It looks like San Diego might just be giving into the arrival of Fall. Although it was still perfect beach weather, I thought I’d steal this opportunity to make a lovely Autumn dish.

My brother, Mike, was staying with me for the weekend so it was the perfect time to go all Fall “gourmet”. Him and I have the same love … Read more...

Confession of a foodie: New Years Eve and I aren’t really getting along right now. All the planning, over priced parties and sequins sort of stress me out.

The only thing as of late that I enjoy about New Years Eve is the excuse to make and stuff myself with a lot more tasty, not-so-healthy, oober satisfying, holiday-type foods.

You know, things like Beef Wellington.

Let’s real here, when else would someone (i.e. Mom and I) slave … Read more...
