Lemon & Herb Roasted Spaghetti Squash

Mmm Spaghetti squash. If this isn’t a squash that you have already tried, well, then you are in for a real treat!

But, don’t get confused. This is no replacement for spaghetti pasta. However, you can use it as a substitute, drenched in marinara and tossed with freshly grated Parm.

Lemon Blueberry Chia Seed Muffins

Chia seeds are so fashionable right now.

 

They even sell a (ridiculously expensive) drink with chia seeds, which is apparently really good. I wouldn’t know because I’ve never purchased and tasted one, well, because you can easily add chia seeds to your favorite juices or water to save a few bucks.

Chia seeds are also good in yogurt, smoothies, and other baked goods. Here, let me show you.

Sometimes a hearty breakfast on-the-go is hard to find. Well, look no more. This energy-packed breakfast muffin has it all!

The hint of orange zest pairs well with the dried cranberries and cinnamon. This flavor trio brings back the nostalgia of the holidays. If you didn’t mind one bit, a healthy handful of chocolate chips would take these to another level!
